Wine.com describes this wine as a "Deep and intense ruby red. The expression of cassis in this wine perfectly represents the Valle Central and its richness in fruit such as cherries and plums. The barrel ageing length thanks to the toast and coffee notes. Medium bodied with silky tannins and long, ripe fruit and berry aftertaste, with impressive balance of fruit and polished tannins. Pair with red meats, well-seasoned dishes, and aged cheeses such as Gruyere or blue."


I was pleasantly surprised by this wine. I don't normally like reds but in drinking this medium-bodied wine, The main flavor that stood out for me was the sour cherry, aligned with Wine Folly's description of Cabernet on pages 104 and 105 of the textbook. The subtle hints of oak that came through also added a nice depth to the tasting experience. It also wasn't super bitter which was a nice finish for me. We didn't pair this with any food, but will definitely have to pair it with a nice gruyere in the future.
